DECANTING & PROPER WINE SERVICE

Here we’ll review the basic steps of service for opening still and sparkling wines, tableside in a restaurant setting. Additionally, we’ll review procedures on decanting wines. The basic service principles are the same for still or sparkling wine; however sparkling wine involves a few extra steps and items needed for service. Decanting requires much more attention to detail and steps of service, but is easily mastered once reviewed here.
